This Black Tie Orzo can be served both warm or chilled and is great in salads and side dishes combined with roasted vegetables, beans, fresh herbs soft cheeses, and olive oil. Add to rice with seasonal ingredients for a novel take on pilaf; cook with warm broth for a risotto style offering; or incorporate into soups and stews for a comforting dinner option.
About Zürsun Idaho Heirloom Grains
In Idaho, Zürsun founder Lola Weyman found several farmers growing unknown lentil varieties. During the late 1980's she began distributing American-grown lentils, with orders coming from top chefs in America, Canada and Europe. Lola also helped develop new heirloom lentil and later, bean, varieties in the region. Today, owner Jim Soran continues that legacy: a commitment to discover, produce and distribute the worlds finest heirloom beans and unusual lentils.
